Anne’s Chocolate Ganache Tart






Ingredients:
Crust
3 tbsp ground nuts (almonds, hazelnuts
6 tbsp sugar
1 ¼ flour
2 tsp lemon zest
6 tbsp unsalted butter

Body
12 oz chocolate-the good stuff
1 ¼ heavy cream
1 tsp vanilla extract

Method
Oven to 350
Dough
Process nuts, add in sugar, flour, zest, and salt and pulse till coarse crumbs form with no large butter clumps.  Should hold together when squeezed between fingers.
Transfer dough to nine inch tart pan with a removable bottom and press dough into pan.  Use a cup to form into pan.
 Bake till golden brown and firm to the touch about 20 minutes.  Let it cool for an hour.
Filling
Place chocolate broken into small pieces in a bowl. 
Heat cream to just below boil and then pour over chocolate.  Stir till mixture is smooth and chocolate is all melted..
Mix in Vanilla.
Pour into tart.
Let it set up for about two hours.
Variations are add pears to tart or strawberries or raspberries.  Use oranges and orange extract.  Let your imagination run wild!

Nanci's Lemon Lush

Crust:
1.5 Cups Flour
1.5 Cubes of butter (3/4 cup)
1 cup Chopped nuts (calls for walnuts but I have used pecans too)

Mix until fine - press into 9x13 pan.  Bake at 350 for 15 minutes.  Cool Completely.

Layers:

1) 8 oz Cream Cheese - 1 Cup powdered sugar - 1 Cup Cool Whip   Mix until smooth - spread over cooled crust
2) 2 pkg instant Lemon pudding - mix according to package (4 Cups of Milk) - Pour over cream cheese layer.
3) Chill and top with remaining Cool Whip - sprinkle with chopped nuts.

Asian Cabbage Salad

Salad Ingredients:
1 head of cabbage, chopped (red, purple, or napa)
1 bunch fresh cilantro
peanuts (to taste)

Dressing Ingredients:
1/3 cup vegetable oil (olive oil or peanut oil)
3 TBSP brown sugar
3 TBSP rice vinegar
1 tsp sesame oil
1 TBSP fresh minced ginger (or more)
2 TBSP soy sauce

Chop and mix salad ingredients.

Combine and stir dressing ingredients.

Combine dressing and ingredients.

Shish Kebab Marinade

Combine in a bowl or zip lock bag. Let meat sit in marinade for overnight or a whole day in advance. At least four hours! J

1 cup olive oil

1/3 cup lemon juice

½ cup Dry Red Wine

Salt and Pepper

1 tsp dried Oregano or 1 TBSP fresh

1 TBSP Crushed garlic

2 Bay leaves

I use this for lamb and Pork (up to eight pounds) but I suppose it could be used for chicken. Perhaps substitute white wine instead of red for chicken?!?!?! Something to try….

Parmesan Potatoes

Ingredients

  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • salt and pepper to taste (add other herbs and spices if desired)
  • 6 big potatoes, peeled and cubed (enough to cover a 9 X 13 Pyrex dish)
  • 1/2 cup butter, melted

Directions

  1. Preheat oven to 350 degrees F .
  2. In a bag combine Parmesan cheese, flour, salt and pepper; mix well. Place potatoes in bag and shake to coat.
  3. Pour butter into a 9x13 inch baking dish. Dump in potatoes.
  4. Bake in preheated oven for 1 1/2 hours, stirring occasionally.

They are done when golden brown and soft inside.

Drop Biscuits

This recipe has been adapted from Cook’s Magazine. It is easily doubled or more as needed.

1 cup of all-purpose flour

1 tsp baking powder

¼ tsp baking soda

½ tsp sugar

1/8 tsp salt

½ cup buttermilk

4 Tbsps butter (melted and cooled)

Mix dry ingredients together in a bowl.

Mix buttermilk and melted cooled butter in separate bowl and let it sit for a bit. It will look lumpy after sitting for a few minutes.

Combine them together with as little stirring as possible.

Use a ¼ cup scoop and drop them onto parchment paper.

Cook in a 475 degree oven for 12 to 14 minutes.

When they come out, brush with some melted butter and a sprinkling of fine salt.

Light and fluffy they are! :)

Walnut Meat(less) Italian balls

Ingredients
1 cup oatmeal
1 cup Italian bread crumbs
2 cup ground walnuts
2 large eggs
2 large onion, minced
1 tablespoon garlic
1 cup Parmesan Cheese
2 tablespoon Italian Seasoning Salt and pepper to taste
2 pints spaghetti sauce

Directions
Mince oatmeal and walnuts and onions in a food processor. Mix all ingredients except spaghetti sauce. Shape into balls and brown in Olive oil. Place in greased casserole. Cover with spaghetti sauce. Bake at 350 degrees for 45 minutes. May be simmered in skillet over low heat for 45 minutes instead of baking. Makes about 20 balls.
