Sue Guerrero's Sweet Potato Souffle

Even people who don't usually like sweet potatoes love this - it is creamy and sweet and almost like a dessert.

Ingredients:
2 large cans sweet potatoes
1/2 Cup Butter
1 Cup Sugar
1/2 Cup Milk
1 Tsp Vanilla
1/2 tsp Cinnamon
1/2 tsp Nutmeg
(see below also)

1. Blend all the ingredients with a food processor or mixer and spread into a greased 9 X 13 baking dish.

2. Bake for 20 minutes at 400 f.

3. Mix together the ingredients below and sprinkle the casserole with this topping.

2 Cups Crushed Frosted Corn Flakes
1 Cup Chopped Pecans
1/2 Cup Melted Butter
1/2 Cup Brown Sugar

4. Bake another 15 minutes.
